Chocolate Wonderland

Good Morning lovely bloggers!  I hope you had a wonderful and relaxing weekend.  Is everyone having a good start to the week?  My day has started a bit slow, and it is rainy here in Minnesota.  It makes me just want to stay curled up by the fireplace with a book.  But I know that cannot happen today, I have a long to do list and I have to go to work!  I have been sitting by my phone waiting to hear how Marks first day of work went!  I hope it is going well.

Anyways I have the perfect recipe that is sure to brighten any rainy day.  Because lets be honest who doesn't love lots and lots of chocolate?  I have grown up eating this chocolate cake, it has been a family favorite for as long as I can remember.  I remember being a little girl helping my mom make this cake.  This was the very first chocolate cake I learned how to make!

  The best part was getting to eat a cup full of the chocolaty batter before the eggs went in (and yes I did this the other day when I made it, and so did my mom)!  It is just that good.  This cake is nothing fancy, just a simple chocolate sheet cake, but sometime simple is better.

I still remember my mom making this chocolate cake for my younger sister Miranda's birthday.  I cannot remember how old Miranda was turning, I just know she as young.  She was having a back yard camp out and I had invited Katie over to spend the night.   We ended up out in the tent with the younger girls because they got scared.  To make a long story short Katie and I ended up cutting two huge squares out of the middle of my sisters birthday cake (we didn't like the crust).  Katie and I didn't know that my mom hadn't gotten a picture of my sister with her cake!  Needless to say my mom was not happy that there was a huge chunk missing out of Miranda's cake for her birthday!  Oops!  

I highly suggest making this cake when you need a fabulous chocolate fix, you are having a bad day, or just need a pick me up.  And I insist that you eat some of the cake batter before its baked (lick the beaters and the bowl) its a must when making this cake.  And if you are not already on a sugar high from eating the batter, huge spoonfuls of frosting must be consumed!  

My Mothers Chocolate Sheet Cake
For the Cake

Mix together:
2 Cups Butter
2 Cups Flour
1 Tsp Baking Soda
Set those Ingredients aside
Now in a small sauce pan combine
2 Sticks of Butter
1 Cup Water
4 Tablespoons Cocoa Powder
Bring these three ingredients to a boil.  One the mixture has begun to boil pour over your dry ingredients (sugar, flour and baking soda)
Mix with a mixer
Now add your 1/2 Cup of Buttermilk and 1 Teaspoon Vanilla.  Mix well. 
(now take out some batter for yourself to enjoy!)
Add your two beaten eggs into your chocolate batter.
Pour your cake batter into a greased jelly roll pan and bake for 20 minutes at 400 degrees.  I always bake the cake for 30 minutes at 350 degrees!

See simple and easy!
Now for the frosting!
What you will do.
In a small sauce pan combine 
1 Stick butter
6 Tablespoons water 
4 Tablespoons Cocoa Powder
Bring these ingredients to a boil

When your chocolate mixture starts boiling carefully pour over your powdered sugar.  You will need about 1 LB powdered sugar.  I usually start with a small amount of powdered sugar and add the rest of the sugar slowly!  Start your mixer slowly!  Add 1 teaspoon of vanilla!  And you have the best chocolate frosting!

Once your cake has completely cooled ice your cake, cut yourself a huge slice and sit back and enjoy!
