Hard to believe it is already Thursday! I was going to post this recipe last night for you all, but my little sister got home and things got a little crazy!
Just think lots of almost peeing your pants because your laughing so hard! My Grandparents get in tonight, we are going to have a full house before heading up north!
But lets get back to talking about chicken salad! I was never a huge fan of chicken salad growing up, because I don't like the taste/smell of mayo. Now a days when I make chicken salad I sub in greek yogurt for all the mayo!
Chicken salad is very versatile, if you do not like something in your chicken salad leave it out! You can always swap in other ingredients for say cranberries. I have two recipes I usually follow, one when I make it for just myself (or other people who like it fruity) and the recipe I make for Mark!Here they are:
Fruity Chicken Salad
1/3 Cup Cranberries (Craisons)
1/2 Cup Sliced Red Grapes
1/2 Cup Greek Yogurt- I used Fage 0%
1-28 Ounce can Swanson Chicken (we used this the last time, saved time) Usually I will prepare my own chicken! About 2 chicken breasts
1/4 Cup Chopped Onion
Pepper, Garlic, and Celery Seed to Taste
A generous helping a fresh basil Chopped!
Mix everything together in a bowl and set in the fridge to allow the flavors to mingle. I personally think chicken salad always tastes better the second day!
Chicken Salad Option #2
Marks Way
1/4 Cup Chopped Onion
1/2 Cup Greek Yogurt
1/4 Cup chopped celery
1-28 Ounce Can Swanson Chicken (or prepare your own)
Pepper, Garlic, and Basil to taste!
Serve with slices of tomato
I like to serve my chicken salad on a bed of greens, or wrap it up for a nice chicken salad wrap! My sister enjoys chicken salad on pita chips! Enjoy however you wish!
