Breakfast for Dinner

Good Evening Everyone!  I hope your weekend is off to a fabulous start.  I am having a relaxing evening watching movies, I want to be nice and awake tomorrow night for the Bachelorette Party! The festivities start tomorrow night at 6!  I don't want to give anything away so I am just going to talk about my amazing dinner.  Breakfast for dinner!  Yum!  I think that the continuous rain all day, the gloominess and the fact I did not sleep well left me wanting comfort food.
Here is what comfort food consists of in my eyes:
Oats
Peanut Butter
Bananas

Any guesses as to what I made?
If you guess banana pancakes you are correct!  However I did not make the typical banana pancakes I made oatmeal pancakes!  I was blown away by how good they were!  Ultimate comfort food, and after a 7 mile run these pancakes were just what I was craving.  Especially when topped with almond butter, and bananas! YUM!

I found this amazing recipe on the Taste of Home website for Applesauce Oatmeal Pancakes.  Check out the recipe and I promise you will not be disappointed!
What you need:
1 Cup Quick Cooking Oats
1/4 Cup All Purpose Flour
1/4 Whole Wheat Flour
1 Cup Skim Milk (or any milk substitute)
2 Tablespoons Applesauce
1 Tablespoon Baking Powder
4 Egg Whites

I followed the directions to a T!

Dry Ingredients
Hot on the Griddle
Bon Appetite
Making pancakes tonight made me think of brunches with Mark (banana pancakes are one of his specialties)!  Guess what 6 days!!
Alright everyone have a fabulous evening, I will see you early AM for a post before all the festivities!
As always remember to live Happily Ever Healthy!

Do you ever do breakfast for dinner, and if so whats your favorite type of breakfast food to have for dinner?

  1. This looks AMAZING. Can't wait to make it for Liam and Rai. Chileans are not known for being pancake people- but maybe this will convert him.

    Love your blog, Hil!
